释义	茅台原料是糯性高粱。茅台酒生产所用的原料高粱为糯性高粱，当地俗称红缨子高粱。此高粱与东北及其它地区高粱不同的是，颗粒坚实、饱满、均匀，粒小皮厚，支链淀粉含量达88%以上。其截面呈玻璃质地状，十分有利于茅台酒工艺的多轮次翻烤，使茅台酒每一轮的营养消耗有一合理范围。茅台酒用高粱皮厚，并富含2%－2.5%的单宁，通过茅台工艺发酵使其在发酵过程中形成儿茶酸、香草醛、阿魏酸等茅台酒香味的前体物质，最后形成茅台酒特殊的芳香化合物和多酚类物质等。
